It's more question that a real issue, but nevertheless:
Is there "official" MantisBT Docker image? I found several like https://hub.docker.com/r/vimagick/mantisbt/ https://hub.docker.com/r/xlrl/mantisbt/ https://github.com/Mikroways/mantisbt and a few others, but none of them is "the best", each contains some nice ideas, but not combined (wrong or lack of dependencies, missing config file configuration, missing email settings etc).
Instead of creating yet another Mantis image it would be better to contribute to the official one. So the question is - is there something like this?

And second question is in general - mostly Mantis docs are about local installation. Wouldn't it make sense to at least include some kind of quickstart for container-based installation? Isn't is a recommended way nowadays?

There can'e be a simple Yes or No for this question.
I recommend to learn the basics of Docker, to understand how it works and to search the web for Pros and Cons of Docker, especially topics like Production Use and Security.

I am not aware that any core dev is working on it.
You can write to Gitter to find out if someone (core dev or user) is interested in it.

Keep in mind, that offering a Docker image is not a big problem, but maintaining it in long term, providing support, ... is another story.

Instead of having lot's of different implementations, a good place to concentrate the effort could be MantisBT Community Plugins
