We are currently on version 2.1.0 and are looking to update to the latest version 2.12.0
I notice that the upgrade notes warn when upgrading from older than 1.2.
However, I wanted to find out if it was ok to upgrade straight from 2.1.0 to 2.12.0 without intermediate version upgrades.
Or is there anything we should be aware of or problems in doing this.
We will of course back everything up first.

There is no need for intermediate version upgrades.
You could upgrade from 1.1.0 to 2.12.0 in one go.
In your case, you have just to consider that the software server requirements changed, e.g. the minimum PHP version is 5.5.
