Footer/Email Question.

Mantis' footer includes an excerpt that reads:
"Contact administrator for assistance".

The word "administrator" is a link to the email used when creating the administrator account.
I used an incorrect email when creating that account, and have also deleted the "administrator" user; what is the easiest way for me to change the email address linked in the footer?
