What kind of Apache, MySQL, PHP and phpMyAdmin package do you use?
AppServ or EasyPHP?

None of them.
For real production purposes I use Linux.
When testing Windows I use XAMPP package.

Yes, you want to work on Windows system than you can use WAMP(Windows/Apache/Mysql/PHP) server. It is the best way to work with PHP programming language. If you want to work on Linux so you can use LAMP(Linux/Apache/Mysql/PHP) server.
