Hi,

I want to create viewer profiles who can acces only a single project.
When i create a viewer profile, he is automaticly assigned as a viewer for all projects and i can't remove it manually from each project.
Is there a proper way to restrict user acces to a specific project ? (without modifying code or pages)

If you need full control on who can access which projects, then you need to create the projects as private projects and explicitly assign each user the appropriate access levels for the relevant projects.

Public projects are accessible to all users by default, and they have their default access level as their project access level (unless it is explicitly overridden).
