Can't find any documentation of what "protected account" means. Explanation, please?

I don't know exactly the answer. But one thing I know is that when an account is set protected, the adminstrator can not change its password.

You can't change the attributes or preferences for a protected account. This is a great idea for a guest account where you don't want, say, the email address to change.

Administrators with protected account seems not to have right to "Manage Global Profiles"

When the 'Protected' flag is set on a user account, it indicates that the account is a shared account (e.g. demo account) and hence users logged using such account will not be allowed to change account preferences and profile information
