I am using mantis 2.0
How can i edit the email content?
(delete fields, change field location in email, add fields)

There is no configuration option for it.

You would have to write a plugin.

It might serve as a starting point, but keep in mind that it seems not to be maintained by the original author and it has been written for MantisBT 1.2.
