For my projects i like to have different options that what is given. How do I do this?

yes...but i can't seem to get custom severity to populate in the dropdown, and also to change reproducibility. i like the idea of using the custom_strings.php so i can upgrade w/o losing this information. any suggestions on how to get that? the manual editing of the language file seems not to be a good idea.

Have you have followed ALL the steps in the above link?
