Changing labels "issue" and "project"

Hello everybody,
I'm right now trying to set up Mantis 1.1.2 for a project by a large corporation in Germany. I'm getting along fine so far with the customization, but I don't exactly know where to change the following things:
1. the text "Project" listed on every page in the upper right corner should be changed to another Text.
2. as far as possible, the word "issue" should be replaced by the word "request".
I have sifted through the different files in the mantis directory, but didn't come up with a solution on my own.
Anyone got a guess where I should look?
