Mantis version 1.0.0rc2
I want to change the category heading in view and report pages to display module instead. Is there a global setting to do that?

Not a global setting as such, but any changes you need to make are in lang/strings_english.txt. If you just change any references to 'category' there to 'module', you should be right.

Also note, though, that if your users are using other languages, you would really need to change each of those language files too.
