Is there a demo website of Mantis? I'd like to see if this is what I am looking for and try it out.

http://bugs.mantisbt.org is the 'live' tracker for Mantis itself.

Although it's not really a demo (in that, you can't login as admin, low project count etc.) you can get a bit of a feel for it.

Having said that, installation is pretty simple and should only take an hour or so max anyway...
