I don't think this has anything to do with Mantis. There are number of things you can do to reduce changes of Mantis emails getting 'marked' as spam. Among of these are creating Sender Policy Framework (SPF) (http://en.wikipedia.org/wiki/Sender_Policy_Framework) for domain where Mantis emails are originating from, adding reverse DNS record for the same (http://en.wikipedia.org/wiki/Reverse_DNS_lookup). There are pretty good resources that you can Google on this subject
