I would like to performa proof of concept to a client. Is there any Mantis dataset that I can use to build on top please? that way everything will look more real

The MantisBT core team does not provide such a dataset,

Maybe one of our users wants to publish his data.
Before doing that, any user related data must be anonymized, private issues and notes and attachments must be removed, ...

Sometime back I implement MantisSeeder for such purpose. But I haven't personally used it for a while. Feel free to try it out.
